2015 - My Year of Zen

Zen, literally translated means "meditation.

This year is going to be my year of mindful meditation.  What exactly does that mean?

To me it means a few things:
  • Relaxation
  • Being unconditionally present in the moment  
  • Calmness of the Mind
My goal is to become even more in touch with myself and the universe.  When I first thought about practicing this ancient Buddhist practice, it sounded very difficult.  Then as I read more, I realized how easy it "should" be.  Release my thoughts and let go.  

Yoga, health, nutrition and nature are all included in My Year of Zen.

As a way to track things, I've started a journal of sorts.  I will use this in a couple ways. One, to remember things I've learned so I can look back on them.  Two, to look back throughout the year to see what I have accomplished.  

A little over a week ago, I began yoga.  I'm starting out small (30 minute sessions) but plan to increase as the year goes on.  Love It!

I am recording healthy recipes I find and using them a soften as possibly.

I am reading everything I can find out health and nutrition. My body deserves it. 

I am buying local and/or organic as often as possible.  I purchase one dozen eggs each week from a local farm.   I cook with fresh vegetables and have gotten away from most anything "in a box".   I will plant a garden again this Spring and grow whatever I can.  

Hiking and exercise will also continue.  In June 2014, Jim and I joined a gym.  We work out faithfully, at least 3-5 times a week, and enjoy it immensely.  We do cardio and strength training both.  Hiking, bike-riding, canoeing and kayaking are definitely part of the program also!  Anything to keep moving.......  

MOVE MORE AND RELAX MORE
It's all about balance

Tonight I tried out a new recipe.  It turned out really good and it's both easy and healthy. Thought I would share:

Tomato Shrimp Stew

2 T Olive Oil
4 Garlic Cloves
1 Large Onion
2 Sweet Red Peppers
1 tsp Red Pepper Flakes 

Saute above ingredients.

Add 1 pound shrimp.  Cook until shrimp are opaque.
Add 12 oz. tomato puree.
Cook until puree is hot. 
Serve alone or over spaghetti squash, spaghetti or rice and enjoy !
